Cashew Queso Bowl

Finding easy and healthy dinners for a family on the move can be difficult, so we've put together a simple tabouleh that you can make in about 30 mins. It's easy and cheezy, which every family loves! We use a spinach base with a mix of tomatoes and veggies, topped off with a cheezy vegan sauce. It is designed to keep you light on your feet, fill your appetite, and keep you healthy.

 

Ingredients

  • 1/4 onion
  • 1 tablespoon of hot pepper (no seeds)
  • 1 cup brown basmati rice
  • 1 cup of cashews
  • 1 1/4 cup of vegetable broth
  • tablespoon of miso
  • 3 tablespoons of nutritional yeast
  • 2 tablespoons of olive oil
  • a pinch of salt
  • 2 1/2 tablespoons of lemon juice
  • 2 cloves of garlic
  • 2 teaspoons of cumin
  • 1 can pinto beans
  • 1 avocado
  • 1 tomato
  • 1/4 cucumber
  • spinach
