Easy Dinner Tabouleh

It's hard to find time to cook for your family, but tabbouleh is an easy one that you can do quickly. Tabbouleh is a vegetarian meal made with parsley, tomatoes, and couscous. It originated in Arab areas but its popularity in Western Culture is growing. Especially because of the ease in making and the rich and fresh flavours. It is healthy and also costs very little to make. There are some variations that you can make with kale or lettuce, but ours is with traditional parsley. It only takes about 30 minutes to prepare.

 

 

Easy Dinner Tabbouleh

1 1/3 cup couscous
1 cup parsley
1 cup diced tomatoes
1 cup diced cucumber
1 clove of minced garlic
1 minced shallot clove
3 tablespoons of capers
3 1/2 tablespoons of lemon juice
2 tablespoons of olive oil
Pinch of salt
Pinch of pepper
1 1/2 cup of chickpeas
